The gorgeous "Kaisen-mori" (seafood platter) that decorates the table features fresh seafood from various parts of Hokkaido. The main dish, shabu-shabu, is served with a choice of two types of soup. The broth is slowly simmered to extract the flavor of the ingredients, and brand-name beef such as Kobe Beef is quickly dipped into the broth. The beef is served with vegetables to enhance the texture of the beef. This course can only be enjoyed in Niseko in winter.
